How to Season and Maintain Cast Iron Cookware

A well-seasoned cast iron skillet is one of the most versatile tools in any kitchen. It goes from stovetop to oven, develops a natural non-stick surface over time, and will literally last for generations. But it does require proper care.

What "Seasoning" Actually Means

Seasoning is a layer of polymerized oil bonded to the iron at a molecular level. It's not just grease sitting on the surface — it's a hard, smooth coating that protects the iron and provides a non-stick cooking surface.

How to Season Cast Iron (First Time)

  1. Wash the pan with warm soapy water (only time you'll use soap)
  2. Dry it completely — heat it on the stove for a minute to evaporate all moisture
  3. Apply a thin, even layer of flaxseed oil or vegetable shortening to the entire pan — inside, outside, handle
  4. Wipe off excess oil until the pan looks almost dry (too much oil = sticky seasoning)
  5. Place upside down in a 450°F oven for 1 hour. Put foil on the rack below to catch drips
  6. Let cool in the oven completely
  7. Repeat 3-4 times for the best initial seasoning

Daily Care Tips

  • Clean while still warm — hot water and a stiff brush or chain mail scrubber
  • Avoid soap for regular cleaning (it can strip seasoning over time)
  • Dry immediately and thoroughly — heat on stove briefly
  • Apply a very thin coat of oil after each wash
  • Cook fatty foods (bacon, sausages) regularly to build seasoning naturally

How to Restore a Rusty Pan

Found a rusty cast iron at a thrift store? Don't worry — it's almost certainly salvageable:

  1. Scrub off all rust with steel wool or a vinegar soak (50/50 white vinegar and water for 1-8 hours)
  2. Wash and dry completely
  3. Re-season from scratch using the process above

Common Mistakes to Avoid

  • Soaking cast iron in water — this causes rust
  • Using too much oil when seasoning — causes sticky, uneven coating
  • Cooking acidic foods (tomatoes, wine) in new seasoning — wait until well-established
  • Storing with the lid on tight — place a paper towel between lid and pan for airflow
